Tom Kha Gai
A recipe for Thai Creamy Coconut Chicken soup with a sweet and sour flavor. This Tom Kha recipe is super easy and will take only a few minutes of your time.

What you need: 6-8 chicken-legs, 1 lime or tamarind paste, 4 kaffir leaves, 4 chillies, half an onion, 1 cup of coconut milk, 1 tomato, 2 lemongrass stalks, 100 gram mushrooms, 1 Table-spoon fish sauce, 1 Tea-spoon sugar, 1 galangal.

Instead of the chicken legs, you can also use 200 gram of sliced chicken fillet.

What to do: Cut the lemon grass in 1 inch pieces and cut the galangal in thin slices. Crush the lemongrass pieces and the chillies a little bit to release the juices. Place the galangal, lemongrass, chillies and kaffir leaves in boiling water and let it cook for 5 minutes. Cut the onion in small pieces and add it with the chicken in the boiling water and let it boil for another 5 minutes. Then cut the mushrooms and tomato and add it with the coconut milk, sugar, and fish sauce into the boiling water. Finally add the tamarind paste or lime juice and mix it with the rest of the soup.

Stir gently and it should all be done in just a few minutes. Enjoy your super easy Tom Kha Gai.
